Time and Leaf

This question can really only be answered by the person drinking the tea. It’s like saying, "Do you like your steak rare or well done?"

The basics guidelines are:

• The more tea you put in your teapot, the shorter the steeping time before the taste becomes strong.

• The hotter the water, the faster your tea will infuse.

Certain teas require special infusion times, temperature and infusions and we give these specific instrucitons in the "more details" section of every tea we offer.

Certain methods, like Gong Fu tea making use large amounts of leaf with short steeping times - we discuss these fully in the Art of Tea Making section.

  • The definition of a cup of tea varies in different countries or regions.
  • A traditional European teacup holds approximately 125-150 ml (5 ounces), while a mug of tea may contain 235 ml (8 ounces) or more.
  • In Japan, a typical cup of green tea may contain only 100 ml (3.5 ounces).
