White teas are made in the simplest way possible - simply picked and ambient dried, sometimes it is finished in the sun or over machine heat at about 50 degrees.  The tea ferments a little during the drying phase (rarely more than 20%).

White tea is said to contain approximately 8-16mg’s of caffeine per cup, the least of all teas. Known to contain higher levels of antioxidants than any other type of tea, it is recommended for everything that green tea is good for, the difference being that it is almost caffeine free. Chinese Medical Practitioners recommend it as a treatment for hives.

TASTE

Jing White Teas emit an almost ethereal flavour. Gentle, sweet and fresh, they embody the untouched and unspoilt mountains where they are picked and naturally dried in the clean mountain air.

White tea should not taste dull or muddy. Instead it should have the delicate feeling of morning dew, complemented by a bright, clear infusion.

Extremely low in caffeine, it can be drunk at anytime of the day or night.
