Yellow tea is picked and processed in a similar way to green tea – up to the point of final baking. After wok-firing the tea to prevent oxidation, the tea is slow cooked over a very gentle heat to ‘yellow’ the tea.

This removes the grassy flavour found in most green teas. It lacks the vegetal taste of green tea and instead offers a clear, smooth taste.

Huo Mountain Yellow Buds

In Mandarin Chinese, this tea is called Huo Shan Huang Ya. Picked between 5th and 15th April 2010, this year's crop of Huo Shan Yellow buds has been produced as a green tea.

Graceful, sappy with a distinctive cool finish that leaves the mouth very refreshed.

Pre Rain Jun Shan (Imperial Mountain) Silver Needle Yellow Tea

In Chinese this tea is called Ming Qian Jun Shan Yin Zhen.

One of China's most famous teas and was reportedly a favourite of Chairman Mao. Its production is extremely limited as it is only produced on Jun Shan Island in Dong Ting Lake, Hunan Province. Picked between 5th April and 15th April 2010 and composed almost entirely of perfectly formed, tender buds.
