Oolong teas fom Wuyi have their typical roasted flavour that plays an unexpected duality with the complex floral aroma of the oolong: with the multiple infusions the rich taste surrender to the lighter scents.
Cassia Oolong has a full bodied character, but I think it's less roasted than other Wuyi oolongs I've tried, and that would be great for those who are approaching to Wuyi oolong for the first time. Where other Wuyi oolongs have a more pungent floral fragrance, this has more a deep fruity sweetness.
To fully enjoy all the aromas of this tea you should use near boiling water, but be careful with the infusion time (the ideal would be to use the gong fu method). Like other oolongs, you can brew this tea many times and it will get sweeter and sweeter.
