Chinese green tea is a huge subject. There are perhaps thousands of Chinese green teas, all with their own terroir, story, following and nuances of flavour. As there are so many, it's very difficult to generalise about the taste of Chinese green teas.
However, for those yet to explore first-hand, we can give the briefest of introductions: Chinese green teas are fired (directly exposed to the dry heat of a wok or firing machine) and thereby have a richness and sweetness, which differs from the intense raw-freshness of the wet-steamed Japanese green teas.
