Hōjicha is roasted in a porcelain pot over charcoal giving the leaf a reddish-brown colour and a rich, warming taste. The roasting process was first performed in Kyoto in the 1920s and Hojicha is still popular in Japan today. The roasting process removes a great deal of the astringency and caffeine is this tea, making it very smooth and easy to drink. Due to the low caffeine levels of this tea, it is particularly good for drinking with meals or even after dinner.

*Based on 3g per serving infused twice.

Infuse: 1 tbsp/cup; water temperature 80ºC: infuse 3 minutes

I like to make this in my little teapot for one. It has a nice light,refreshing sweetness. I find it a comforting and warming brew in this cold wet time of year.
Being low in caffeine, I can drink this throughout the day. This has definitely become my favourite green tea!

This is a really pleasant tea. Its very forgiving and I gave it quite a good brewing in a gaiwan.

I brewed it around 80c for 2-3 mins for the first brew with a good amount of leaf. If you under brew it you miss the slight sweetness that holds up the caramel notes - so be brave with this one. Its clean, soft and has a light toasty flavour with no taste of smoke.

A great green tea for this time of year (winter approaching) and a really nice evening brew.
