Forget crispy bacon for breakfast, granola is the real order of the weekend morning. Made quickly at home with nuts, seeds, and a little maple syrup, this versatile breakfast food is the perfect accompaniment to fresh fruits, yoghurt and (of course) paired and served with hot tea. It’s a breakfast tea pairing you don’t want to miss.

Breakfast Tea Pairing : Granola and Yunnan Gold Black Tea
RECIPE

Breakfast Tea Pairing

Date and Pumpkin Seed Granola

Our friend Mira Manek recently released her stunning cookbook – Saffron Soul – and was kind enough to share this recipe for granola with dates and pumpkin seeds. Easy to whip up and pop in the oven, breakfast has been brighter all week, especially when it’s served with our Yunnan Gold black tea.

Serves: 6    |    Time: 30-mins

INGREDIENTS
  • Coconut oil 2 tbsps
  • Oats 10 tbsps
  • Dates (or other stone fruit) roughly chopped 100G
  • Gently crushed pecans 100G
  • Pumpkin seeds 1 tbsp
  • Cinnamon 1.5 tsps
  • Maple syrup (or coconut sugar) 2 tbsps
METHOD

Start by preheating the over to 180C/gas mark 4. Now melt the coconut oil in a medium pan on low hear. Add the oats and stir them for 1-2 minutes before adding the rest of the ingredients. Keep stirring the granola for 7-8 minutes until brown. Transfer to a baking tray and place in the oven for 10-15 minutes, checking regularly after 5-minutes to ensure it doesn’t burn. Leave to cool down before serving as it will become crispier once cooled. This granola is great with any kind of milk, or with yoghurt and berries.

Breakfast Tea Pairing : Yunnan Gold

Our tea buyer, Tom Price, has an excellent palate. He’s our first port of call when we want to get no-fuss tea and food pairing inspiration. He recommended our Yunnan Gold black tea. The taste combines rounded caramel sweetness with a smooth long lasting finish of spice; ginger, nutmeg and cloves. The long downy golden buds of the tea produce a deep and dark infusion delivering a strength perfect for the morning. Perfect for your granola, then.
