Earl Grey Baked Sea Bream | Tea Recipes

We’ve seen several tea recipes among our Michelin-starred chefs that deploy tea as an ingredient in marinades, broths, and poaching liquids and it inspired us to try our own recipe using our fragrant and uplifting Earl Grey for something a little lighter at Christmas. It's a versatile ingredient for Earl Grey Tea Recipes.

We recommend serving this dish on Christmas eve, ahead of the heavier festivities on Christmas day, with steamed green vegetables.

Earl Grey Tea Recipes: Baked Sea Bream

 

It's also extremely easy to make freeing up more time for any last-minute wrapping or preparations. We might also recommend serving this cold as a Christmas morning breakfast with brown bread toast and butter, in place of smoked salmon. The delicate nature of the dish pairs incredibly well with a glass of sparkling wine.

INGREDIENTS
  • 2 whole sea bream, filleted
  • 1 lemon, cut into wedges
  • 3 tbsp JING Earl Grey
  • 300ml boiling water
  • Salt
  • Pepper
METHOD

Preheat oven to 180-degrees. Line baking tray with greaseproof paper. Place whole fish in tray. Scatter the earl grey tea evenly across the fish. Add wedges of lemon. Pour boiling water over the top, drizzle a little oil, season with salt and pepper. Cover with greaseproof paper and bake in the centre of the oven for 30-minutes. Remove from oven, leave to rest for five minutes before serving with steamed green vegetables and fresh lemon juice.
