Longjing Tempura Prawns with Yuzu Mayonnaise | Dragon Well Tea Pairing

You may have already tried our Longjing Shrimp, paired with Dragon Well green tea – a dish traditional to the area of Hangzhou, the authentic region in China for this famous tea. Here, we’ve taken a fresh look and interpretation, creating something as light and succulent as the tea with a crisp texture, and that enhances the chestnut-sweet flavour that this tea is so celebrated for.

JING Dragon Well Green Tea Pairing

China’s most famous tea can only come from Hangzhou and be handled by masters, imparting unforgettable notes of chestnut, with a silky texture – a delicious mark of the terroir. This pairing balances the authentic qualities of this tea with the light, sweet flesh of fresh prawns, working beautifully with the nutty notes that are the result of the tea leaves being pan fired on a dry heat.
