Here, we’ve taken a fresh look and interpretation, creating something as light and succulent as the tea with a crisp texture, and that enhances the chestnut-sweet flavour that this tea is so celebrated for.

China’s most famous tea can only come from Hangzhou and be handled by masters, imparting unforgettable notes of chestnut, with a silky texture – a delicious mark of the terroir. This pairing balances the authentic qualities of this tea with the light, sweet flesh of fresh prawns, working beautifully with the nutty notes that are the result of the tea leaves being pan fired on a dry heat.


RECIPE
Longjing Tempura Prawns with Yuzu Mayonnaise
Serves: 4
INGREDIENTS
For the Shrimp
1kg Medium Fresh Shell-On Shrimp
For the Tempura
100g Plain Flour
200g Ice Water
1 Whole Egg
10g Baking Powder
30g Potato Starch
For the Powder
20g Dragon Well Tea
1g Salt
For Yuzu mayo
60g Egg Yolk
350g Neutral Oil
30g Yuzu Juice
8g Hondashi
15g Salt
METHOD
- Remove the head from the prawns and carefully remove the shell of the prawns keeping the base of the tail
- Mix the dry ingredients together
- Add the ice water and mix
- Grind the tea into a fine powder using a spice grinder, coffee grinder or mortar and pestle
- Place all the ingredients in a hand blender jug
- Use the hand blender to emulsify the mixture
- Start at the bottom on full and slowly lift the hand blender to the top
- Fill a pot half way with neutral oil (vegetable or rapeseed) and heat to 180C
- Holding the prawn at the tail tip lightly flour the body and dip in the cold tempura batter
- Fry until crispy
- Remove from oil and dry on absorbent paper
- Dust with the tea salt and serve with the yuzu mayo
