Silken Tofu and Nori Rolls

Tea-iere Set with Sencha Green Tea and Japense Canapes

We continue our series of light, healthy snacks to enjoy alongside our teas.

Chris and Carolyn Caldicott have come up with two inspiring dishes to enjoy alongside our Sencha Green Tea.

Silken TofuEnhance the subtle taste and texture of soft silken tofu, by cutting it into small squares and topping with half a teaspoon of finely grated ginger root, a scattering of sliced chives and mint leaves and a drizzle of mirin dipping sauce.

This dipping sauce couldn’t be simpler, for four servings warm 60 ml light soy sauce with two tablespoons of mirin and half a teaspoon of honey until the honey has dissolved. That's it!

Nilgiri RollsNori seaweed rolls filled with cucumber, asparagus, avocado and wasabi mayo pair perfectly with grassy Sencha green tea.

Lay a sheet of nori seaweed on a clean dry chopping board with the shiny side downwards and the longest side facing you. Starting from the left cover the nori with overlapping wafer thin slices of cucumber, leaving a two centimeter uncovered strip down the right hand edge. Place a couple of fine asparagus tips five centimeters from the left edge, surround them on both sides with strips of avocado and smear with a dessertspoon of mayonnaise mixed with wasabi to taste.

Turn the board until the uncovered edge is furthest away, then using both hands tightly roll the nori. Damp the uncovered edge with a dab of water to seal, cut the roll in half and trim the edges. Repeat until you have the required number of rolls and serve with a dish of soy sauce.

Japanese Green tea is a great match to both these dishes with its syrupy textural quality and rich grassy flavour.
