Organic Matcha Ceremonial Grade Green Tea

The Origin Story

JING Organic Matcha Ceremonial Grade is produced in Kirishima, Kagoshima, in the south of Kyūshū island. The area – at an altitude of 450m - is overlooked by Sakurajima: an active volcano which periodically covers the area in white ash, making the terroir superbly fertile and creating mineral rich soils that nurture unique flavour profiles in the tea bushes. Unlike other Matcha teas, which are often blended, our Organic Matcha Ceremonial Grade is a pure expression of a single cultivar ('Okumidori') with exceptional character: high floral notes, and deep, vegetal umami.

Small batches of leaves are stone-milled to order using the traditional ‘Mikage’ method and sealed into airtight packaging for optimal flavour. The vibrant green colour of JING Organic Ceremonial Grade Matcha is testament to its supreme freshness; retaining the full integrity of the leaves for a deliciously vivid experience.

Japan - Kagoshima

Kirishima is in the far south of Kyūshū Island, famous for its volcanic landscape.

The mountainous climate fluctuates from warm to cold extremes, influencing the growth of the highest quality ‘Tencha’ tea leaves that flourish here. The bushes are grown in the shade to encourage the production of amino acids and chlorophyll that contribute to the intense green colour and sweet umami flavour of the leaves, which are then steamed to stop oxidization, a classic method for Japanese green teas.
