    What is Green Tea?

    The first tea type to be commonly produced in China was green tea, for hundreds of years it was considered as a Chinese medicinal herb and drunk for its health benefits. Today, we define green tea as any tea that is unoxidized; crafted from freshly picked leaves, which are withered and then heated to stop the leaves from oxidising. This heating fixes the green colour in the leaves, while developing their flavour. In china they often heat their green tea leaves by frying them, sometimes in a wok, creating the sweet, refreshing flavour of teas like Dragon Well and Jade Sword™. While in Japan they tend to use hot steam, which gives green teas like Sencha and Gyokuro their characteristic umami and deep, grassy taste.
