    Within our selection of white teas you’ll find a range of flavours from distinct origins within China. Fujian in the south east is the distinguished home of white tea, where some of the best white teas are produced, like soothing Silver Needle and complex Aged White Peony. While Yunnan, in the south west is a land of ancient mountains, but also one of white tea innovation, where we looked to source our new Organic White Peony and Jasmine Silver Needle.     What Is White Tea?

    The craft of Chinese white tea is a simple but precise process. The tea is picked, withered and then dried, often in the sun. With minimal intervention or machinery used in this process, white tea retains a naturally pure flavour. Though there are still essential choices for tea producers to make and create the end result. For example, the different styles of white tea in China are defined by what part of the tea plant you choose to pick. Silver Needle is crafted with just the buds for a sweet, syrupy flavour, while White Peony is made from the buds and one or two young leaves for added complexity.
