The Story of this Tea

This tea gets it's name from the ancient dragon that appears in the water of a well close to where the tea was first created - In 250 AD, in the shadow of a great drought, a brave monk navigated treacherous & dusty paths to reach a hidden sanctuary he’d once heard whispers of: the sacred well where a mystical dragon was thought to lurk.
Moved by the monk’s heartfelt plea, this legendary dragon conjured forth a life-giving rain and rescued the land. Could be considered that the Dragon is a representation of the quality of the water and soil in the area - it "appears" when it rains - when the lighter rain water lands on the relatively dense groundwater in the well it creates sinuous movements, which give the illusion of a dragon. This tea is also said to have helped Emperor Kanji's sick mother back to health - and so can represents the health benefits of this tea.
Dragon Well is typically made from the buds and two youngest leaves of the tea plant, these are the freshest parts of the plant which appear in early spring and are full of all the nutrients and flavour the plant has stored up over winter.
There is a short window of around 4 weeks when the weather is just right to pick the very best of these buds and leaves. Local producers will use their intuition and experience to know the right time to head to the garden and harvest their crop – usually crisp, early mornings when the sun is warm and so the buds are growing gently but not too hot they’re turning to leaves too quickly.

Where does this cup come from?

Zhejiang, China

Finding this tea every year is one of our favourite challenges. We’ve been working with Shentang Wen for a few years now as he’s one of the most skilled pan-firing tea masters we’ve ever met. This year, he’s perfectly captured the balance of spring green and floral freshness with warm and distinct chestnut aromas. Close to Thousand Island Lake, his beautiful garden is surrounded by lush, green forest. Here, they use a very traditional and lesser known cultivar of the tea plant called Jiukeng, one of the earliest cultivars used to create Dragon Well tea. Hand-crafted and traditionally pan-fired, the leaves impart a velvety, thick infusion with a fresh, chestnut flavour that is truly unique. This tea will appeal to many as it has a very sweet, easy drinking character.

How do I store JING tea?

All tea should be kept away from heat, light, moisture and odours. Exposure to these will cause the tea to deteriorate and lose flavour.

We recommend storing our loose teas in our beautiful Refill Caddies or its resealable ziplock bag, and store them in a cool dry place. Generally speaking, black teas and more heavily oxidized oolongs can be stored for a longer time than green, white and lightly oxidized oolong teas. Green teas, white teas and light oolong teas are best drunk within two to three months of opening.

However, they can also be stored in the fridge to maintain freshness for as long as possible. If you choose to store your green, white and light oolongs in the fridge, be careful to take the packs out a little in advance of making your tea so that they can reach room temperature. Opening a bag straight from the fridge will result in condensation on the inside of the pack, which when closed can then affect the quality of the tea inside.
